Off the Beaten Path- Pineapple Fried Rice



I cannot write for a food blog without mentioning Jasmine Thai Cuisine. SCU students affectionately refer to it as Thai Jasmine. The establishment has been a Bronco favorite for years, serving tasty Thai noodles and curry to the community. My group of friends make it a point to have dinner here at least 3 times a quarter. One of the dishes we order every time is the Pineapple Fried Rice.

The Pineapple Fried Rice at Thai Jasmine is absolutely perfect. Every ingredient compliments the overall flavor of the dish and brings it all together in a tasty, rich, and clean tasting dish. When you take a bite of this rice dish, you get cashews, raisins, pineapple, and onion. The raisins and pineapple lend their unique sweetness's to the dish. The raisins are good, but the pineapple is what elevates the dish to its supreme goodness. The pineapple is always slightly caramelized on the outside. Ideally, you want to have a piece of pineapple per bite, each bite should be coated in delicious pineapple juice released from the cooked pineapple. The other great aspect of the dish is the rice. The rice has a rich, yet refreshing flavor. I believe it is the infusion of basil. The dish can be served with chicken, beef, or shrimp. All of these choices are great proteins. Also, the Rice goes great with their Roasted Duck Curry. Pineapple Fried Rice, try it and instantly fall in love.
