Quinoa

So some of you probably know about this awesome Aztec grain called Quinoa. Extremely high in protein, fiber and vitamins, it's considered to be a member of the superfood family, along with fruits like acai and goji. You can find it next to the rice and pasta in any Whole Foods or specialty market. While they often sell it in pasta and cereal form, it is most commonly seen as a grain, similar to rice. You boil it just like rice, but it has way more health benefits. My favorite simple prep for quinoa: Boil in vegetable broth, using the measurements on the package, then saute some spinach, green onion, tomatoes and garbanzo beans. Mix them together and enjoy a high protein, vegan meal!
