Chocolate Strawberry Pie

This is my own recipe for chocolate strawberry pie. I feed it to non-vegans all the time who rave about it. My grandma, who is a very traditional Paula Deen style chef (butter, butter, butter) absolutely loved it... until she saw the ingredients. But don't let that stop you! It's very creamy, rich and decadent, while being so much healthier than the chocolate cream pies made with butter, fat, and cream cheese. It also only take about 10-15 minutes to prepare if you buy a pre-made crust (about 30 min if you make your own!)


Cam’s Chocolate Strawberry Pie
Chocolate Cookie Pie Crust
Buy premade Oreo crust or:
1 box of Oreo Cookies (which yes, are vegan)
1/3 cup earth balance soy garden
     Crush cookies with mallet or by hand until fine crumbs. Mix small handfuls of the 
crumbs with with a teaspoon of Earth Balance at a time. Mix well and press into pie 
tin. Repeat until pie tin is covered with crust.

PIE FILLING
1 lb silken tofu
12 ounces dark chocolate (1 1/2 to 2 cups chocolate chips)
1 -3 tablespoon maple syrup
1 teaspoon vanilla

blend tofu until smooth, melt dark chocolate in double boiler, then add to rest of ingredients to blender. Chill for 2 hours.

Strawberry Topping
1 Carton strawberies
Slice strawberries in half, remove stems, and decorate top of chilled pie.
