Lunch Time

My favorite salad to make at Benson consists of romaine lettuce, iceberg lettuce, carrots, olives, lentils, and blue cheese. For the dressing, I either use oil and balsamic vinaigrette or sesame seed dressing. Then, I add some croutons and have the Benson employes toss it with grilled chicken. This salad is great for spring and is a delicious treat for lunch, dinner, or just a snack.
